Method

Irish coffee with florentines

1.Pour coffee into heatproof serving glasses. Add whiskey and sugar; stir to combine.
2.Top with whipped cream; serve at once with Florentines.

3.Preheat oven to 170°C/150°C fan forced. Line 2 baking trays with baking paper. Combine cornflakes, cherries, sultanas, almonds and condensed milk in a bowl.
4.Drop rounded spoonfuls of mixture onto prepared trays, allowing room for spreading. Bake for 10-12 minutes or until light golden brown. Let cool on trays.
5.Meanwhile, place chocolate in a heatproof bowl over a saucepan of simmering water (do not let bowl touch water). Cook and stir for 2-3 minutes or until chocolate melts and is smooth. Remove bowl from pan. Let cool slightly.
6.Spread chocolate over flat side of each florentine. Using a fork, create lines in chocolate, then place, chocolate-side up, on a wire rack to set.
