Ingredients
Irish coffee with florentines
- 2 cup hot espresso coffee
- 1/4 cup irish whiskey
- 1 tablespoon caster sugar
- whipped cream, to serve
- lorentines, to serve
Florentines
- 2 cup cornflakes
- 100 gram packet, red glace cherries, chopped
- 1/2 cup sultanas
- 1/2 cup slivered almonds
- 3/4 cup sweetened, condensed milk
- 200 gram dark chocolate
Method
Irish coffee with florentines
- 1Pour coffee into heatproof serving glasses. Add whiskey and sugar; stir to combine.
- 2Top with whipped cream; serve at once with Florentines.
Florentines
- 3Preheat oven to 170°C/150°C fan forced. Line 2 baking trays with baking paper. Combine cornflakes, cherries, sultanas, almonds and condensed milk in a bowl.
- 4Drop rounded spoonfuls of mixture onto prepared trays, allowing room for spreading. Bake for 10-12 minutes or until light golden brown. Let cool on trays.
- 5Meanwhile, place chocolate in a heatproof bowl over a saucepan of simmering water (do not let bowl touch water). Cook and stir for 2-3 minutes or until chocolate melts and is smooth. Remove bowl from pan. Let cool slightly.
- 6Spread chocolate over flat side of each florentine. Using a fork, create lines in chocolate, then place, chocolate-side up, on a wire rack to set.
