Indonesian fried rice

This classic Indonesian rice is packed full of wonderful high-quality ingredients like juicy prawns, tender shredded chicken and fresh greens. Tossed with a punchy, Asian dressing, this dish is beautiful served warm on its own or as part of a gourmet dinner banquet.

Ingredients

Method

1.Heat 1 tablespoon of the oil in a frying pan on medium. Add egg and swirl to make a thick omelette. Cook 1 minute each side, until set. Remove, cool and slice. Set aside.
2.Heat remaining oil in pan on medium. Stir-fry onion and garlic 3 minutes, until soft. Add chicken and prawns. Cook for 2 minutes, until browned. Add wombok. Stir-fry for 2 minutes, until softened. Add sambal and tomato sauce and mix well.
3.Increase heat to high, add rice and soy sauce. Stir-fry to heat through. Mix in omelette. Serve with cucumber and onion.

Sambal pemuda is a chilli paste. Look for it at the supermarket. If unavailable, you can use tomato chilli sauce. You will need to cook 1 1/3 cups of uncooked rice for this recipe.
