Individual strawberry crumbles
  • 2/3 cup plain flour
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoon caster sugar, plus 1 tablespoon extra
  • 50 gram unsalted butter, chilled, chopped
  • 500 gram strawberries, quartered
  • 1 cup greek-style natural yogurt
  • 1 teaspoon lemon zest, coarsely grated

    Preheat oven to 200°C/180°C fan forced. Grease 4 x 1/2-cup ovenproof dishes.

    Place flour, cinnamon and sugar in a bowl. Rub in butter to make large coarse crumbs. Chill until required.

    Combine strawberry and extra sugar in a bowl. Stand, stirring occasionally, for 10 minutes or until sugar dissolves and fruit juices are released.

    Divide mixture among prepared dishes. Sprinkle crumble mixture evenly over tops. Bake for 15 minutes or until golden and bubbling. Combine yogurt and zest in a bowl. Serve crumbles topped with lemon yogurt.
