Iced watermelon and ginger zinger punch

Punch doesn't get much better than this refreshing iced watermelon and ginger zinger! A must-try recipe for sharing with friends and family on a hot summer afternoon

  • 90 gram grated ginger
  • 3 lemons, flesh and juice
  • 3 limes, flesh and juice
  • 1/2 cup caster sugar
  • 1.5 kilogram watermelon flesh
  • 4 cup ice
  • orange slices
  • mint sprigs

    Press grated ginger through a sieve to extract juice. Combine with flesh and juice of lemons, limes and caster sugar.

    Place on low heat, stirring, until sugar dissolves. Bring to the boil, then cool.

    Strain into a large punch bowl. Purée watermelon flesh in a blender. Pour into bowl with ice, orange slices and mint sprigs.
