Hot apples and ice-cream sandwiches

Sweet, caramelised apple slices are beautiful sandwiched between fluffy, golden cake in this quick and tasty dessert. Serve with a drizzle of maple syrup and a dollop of ice-cream for a divine sweet treat.

Hot apple and ice-cream sandwiches
  • 90 gram butter
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 2 green apples, cored, thickly sliced
  • 450 gram madeira loaf cake, cut into 8 slices
  • 4 scoops vanilla ice-cream
  • maple syrup, to serve

    In a large frying pan, combine half each butter, sugar and cinnamon. Stir over medium heat, until sugar dissolves.

    Cook apples 1-2 minutes each side, until golden. Remove from pan; keep warm.

    Melt remaining butter, sugar and cinnamon in same pan. Cook cake slices 1-2 minutes each side, until lightly golden.

    Place 4 cake slices on serving plates. Top with apples and a scoop of ice-cream. Drizzle maple syrup over. Top with remaining slices of cake.


You could try this with fruit cake, fruit loaf or even brioche.
