Ingredients
Honeydew melon salad
- 1/2 cup sugar
- 1 lemon, rind finely grated, juiced
- 2 cinnamon sticks
- 1 honeydew melon, halved, peeled, seeded
- mint leaves, vanilla yoghurt or cream, to serve
Method
Honeydew melon salad
- 1Place sugar, lemon rind and juice, cinnamon sticks and 3/4 cup water in a saucepan. Heat on low, stirring, until sugar dissolves. Increase heat to medium and simmer for 5 minutes, without stirring, until syrupy. Set aside to cool to room temperature.
- 2Cut honeydew into wedges and arrange in serving bowls. Drizzle with sugar syrup, top with mint and a halved cinnamon stick, and serve with yoghurt or cream.
