Honeydew granita

This is a delicious sorbet or granita and a great way to use any summer fruit - we used watermelon, mango, rockmelon, pineapple and lychees.

Honeydew granita
  • 4 cup honeydew melon flesh, chopped
  • 1/2 cup caster sugar
  • 2 tablespoon lime juice
  • fresh fruit, to serve

    In a blender or food processor, combine melon, sugar and juice. Process until smooth.

    Pour mixture into a large, shallow baking dish. Freeze 1 1/2 hours until almost completely frozen. Scrape a fork along the surface to create small ice crystals.

    Return to freezer 1 hour until completely frozen. Scrape again until all the mixture resembles ice crystals. Serve in small glasses with fresh fruit.
