This sweet honey slice with roasted strawberries is the perfect accompaniment for your morning or afternoon cuppa.

Ingredients
Honey slice with roasted strawberries
- 2 cup (300g) self-raising flour
- 1 cup (150g) plain (all-purpose) flour
- 3 teaspoon anise seeds
- 1 teaspoon ground cinnamon
- 1/2 cup (80g) fine semolina
- 1/2 cup (110g) caster (superfine) sugar
- 1/2 cup (70g) slivered almonds, roasted
- 3/4 cup (180ml) olive oil
- 1/2 cup (125ml) milk
- 1 egg, beaten lightly
- 1 tablespoon honey
- 2 tablespoon icing (confectioners') sugar
- greek-style yoghurt, to serve
Honey syrup
- 1 1/2 cup (525g) honey
- 1/3 cup (80ml) water
- 1/3 cup (75g) caster (superfine) sugar
Roasted strawberries
- 500 gram small strawberries
- 1 vanilla bean
- 2 tablespoon caster (superfine) sugar
Method
Honey slice with roasted strawberries
- 1Preheat oven to 180°C. Grease a 20cm x 30cm slice pan.
- 2Sift flours into a large bowl; stir in anise seeds, cinnamon, semolina, caster sugar and almonds. Make a well in the centre, add oil, milk, egg and honey; stir until mixture forms a soft dough. Press dough onto base of pan. Bake for 30 minutes or until firm to the touch.
- 3Meanwhile, make honey syrup: Stir ingredients in a medium saucepan over heat, without boiling, until sugar dissolves. Simmer, without stirring, for 2 minutes or until thickened slightly.
- 4Pour hot syrup over hot slice. Cool in pan.
- 5While slice is cooling, make roasted strawberries: Halve or slice strawberries, then place on a baking-paper-lined oven tray. Split vanilla bean in half lengthways; scrape out seeds into a small bowl. Add sugar; stir to combine. Sprinkle sugar mixture over strawberries. Cut vanilla bean halves into thirds; place on strawberries. Roast for 15 minutes or until strawberries have softened slightly and released some of their juices. Discard vanilla bean.
- 6Just before serving, dust slice with sifted icing sugar then cut into 12 pieces. Top with roasted strawberries and dollops of yoghurt.
Notes
This slice can be made up to the end of step 3, a day ahead; store in an airtight container at room temperature. Roasted strawberries are best made close to serving.
