These muesli bars are the perfect after-school snack for kids on the go. They are packed full of the protein of peanut butter and energy-boosting honey.

Honey sesame muesli bars
- 1/4 cup (35g) sesame seeds
- 1 cup (130g) toasted muesli
- 3 cup (105g) rice bubbles
- 1/2 cup (40g) desiccated coconut
- 1/4 cup (35g) sunflower seed kernels
- 125 gram butter, chopped
- 1/3 cup (115g) honey
- 1/3 cup (95g) peanut butter
- 1/2 cup (110g) raw sugar
Method
Honey sesame muesli bars
- 1Preheat oven to 180°C. Grease a 20cm x 30cm slice pan and line with baking paper, extending paper 5cm over long sides.
- 2Place sesame seeds on oven tray and roast about 5 minutes or until toasted lightly. In a large bowl, combine muesli, rice bubbles, coconut, sunflower and sesame seeds.
- 3Combine butter, honey, peanut butter and sugar in a small saucepan. Stir over medium heat, without boiling, until butter is melted and sugar is dissolved. Bring to the boil, then simmer, uncovered, without stirring, for 5 minutes. Stir mixture into dry ingredients.
- 4Press mixture firmly into pan; cover. Refrigerate until set, and cut into bars to serve.
