Honey pork couscous
  • 400 gram diced pork
  • 2 teaspoon vegetable or olive oil, plus 1 tablespoon extra
  • 2 tablespoon honey
  • 2 tablespoon white wine vinegar
  • 200 gram packet lemon, mint and parsley instant couscous
  • 1 large zucchini, coarsely grated
  • 1 bunch parsley, chopped
  • 1/2 cup crunchy combo sprouts mix
  • 1 large pear, halved lengthwise, cored, thinly sliced

    Place pork and oil in a medium bowl; toss to coat. Season. Whisk honey, vinegar and extra oil in a medium heatproof bowl. Heat a wok or large frying pan over high heat. Stir-fry pork, in batches, for 2-3 minutes until browned. Add pork to honey mixture in bowl; toss to coat. Cover with foil; stand for 5 minutes to rest.

    Meanwhile, prepare couscous in a large heatproof bowl as packet directs.

    Add zucchini, parsley, sprouts and pear to couscous; toss gently to combine. Add pork mixture; toss gently to combine. Serve.


Use pork leg steaks instead of diced pork.
