Ingredients

Honey mustard
  • 1/3 cup (80ml) olive oil
  • 2 tablespoon cider vinegar
  • 1 teaspoon dijonnaise
  • 1 tablespoon honey

  • 750 gram baby carrots
  • 2 tablespoon olive oil
  • 2 teaspoon ground cumin
  • 2 teaspoon mild paprika
  • 250 gram silver beet, finely shredded
  • 5 (125g) shallots, sliced thinly

Method

    To make honey mustard dressing, combine all ingredients into a small bowl and whisk well to combine.

    Combine carrots, oil and spices in large bowl. Cook carrots on heated oiled barbecue (or grill or grill pan) until tender.

    Place carrots in large bowl with silver beet, shallots and dressing; toss gently to combine, season to taste.
