Homemade muesli bars

A healthy alternative to bought snack bars, these muesli bars work perfectly for school or work lunchboxes.

Ingredients

Homemade muesli bars
  • 100 gram butter
  • 1/3 cup honey
  • 2 tablespoon caster sugar
  • 2 cup rolled oats
  • 1 cup rice bubbles
  • 1/2 cup sultanas
  • 1/2 cup dried apricots, chopped
  • 1/2 cup whole almonds, roughly chopped
  • pepitas, sunflower seeds
  • 1/4 cup each sesame seeds

    Preheat oven to 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper. In a small saucepan, combine butter, honey and sugar, stirring over low heat until sugar dissolves.

    Bring to the boil and cook 1-2 minutes, until syrup thickens slightly.

    In a large bowl, combine all remaining ingredients. Pour syrup over dry ingredients. Mix until well combined. Pour mixture into pan, spreading evenly.

    Using a fork, press mixture down very firmly (this is a very important step to help stop the slice crumbling).

    Bake 10-15 minutes, until golden Cool completely in pan. Chill 2 hours. Cut into fingers to serve. Store in an airtight container.

Notes

If your child has a nut allergy or school has a nut-free policy, replace almonds with desiccated coconut.
