Homemade muesli bars
A healthy alternative to bought snack bars, these muesli bars work perfectly for school or work lunchboxes.

Homemade muesli bars
- 100 gram butter
- 1/3 cup honey
- 2 tablespoon caster sugar
- 2 cup rolled oats
- 1 cup rice bubbles
- 1/2 cup sultanas
- 1/2 cup dried apricots, chopped
- 1/2 cup whole almonds, roughly chopped
- pepitas, sunflower seeds
- 1/4 cup each sesame seeds
Method
Homemade muesli bars
- 1Preheat oven to 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper. In a small saucepan, combine butter, honey and sugar, stirring over low heat until sugar dissolves.
- 2Bring to the boil and cook 1-2 minutes, until syrup thickens slightly.
- 3In a large bowl, combine all remaining ingredients. Pour syrup over dry ingredients. Mix until well combined. Pour mixture into pan, spreading evenly.
- 4Using a fork, press mixture down very firmly (this is a very important step to help stop the slice crumbling).
- 5Bake 10-15 minutes, until golden Cool completely in pan. Chill 2 hours. Cut into fingers to serve. Store in an airtight container.
Notes
If your child has a nut allergy or school has a nut-free policy, replace almonds with desiccated coconut.
