Hoisin beef pot roast with noodles

This clever hoisin beef pot roast recipe utilises your pressure cooker to create a tender, delicious pot roast in just 30 minutes. Serve with noodles and plenty of Asian greens

Method

1.In a large frying pan, heat oil on high. Brown beef on all sides.
2.Transfer beef to a pressure cooker. In a jug, combine stock, sauces, sugar, garlic, ginger and star anise. Spoon over beef to coat and scatter with onion.
3.Close pressure cooker. Bring to pressure following manufacturer’s instructions (until steam escapes at a constant rate and there’s a regular hissing sound). Cook on high for 25 minutes.
4.Release pressure and remove lid. Drain beef from liquid, reserving liquid. Rest, loosely covered with foil, for 5 minutes. Strain sauce through a sieve into a large saucepan. Boil for 5 minutes until reduced by half.
5.Place noodles and greens in a large heat-proof bowl, then cover with boiling water. Soak for 5 minutes until noodles soften, then drain.
6.Slice beef and serve with noodles, greens and sauce.
  • Sprinkle with sesame seeds or chopped cashews, if desired.
