Method

1.In a large frying pan, heat oil on high. Saute onion and garlic for 3-4 minutes until onion is tender.
2.Increase heat to high. Brown mince for 5-6 minutes, breaking up lumps. Add vegetables and cook, stirring, for a further 2-3 minutes. Stir in paste and cook for 1 minute.
3.Mix in combined tomatoes and stock. Bring to boil. Reduce heat to medium. Simmer for 15-20 minutes. Season to taste.
4.Meanwhile, in a large saucepan of boiling water, cook pasta until al dente. Drain. Return to pan.
5.Toss hot sauce through pasta in pan. Serve topped with shaved parmesan if liked. Accompany with salad.

Turkey mince is learner than regular beef or pork mince. To hide added vegetables from the kids, grate vegies rather than chopping them. Add chopped basil for green goodness and flavour.
