Method

1.To make ‘chalk board’, knead ready-made black icing on a surface dusted with a little sifted icing sugar until icing loses its stickiness. Roll icing between two sheets of baking paper until 2mm thick. Cut into a 22cm x 27cm rectangle. Stand icing overnight to dry.
2.Turn cakes top-side down; secure, long sides together, on the cake board with a little frosting. Spread tops with a little icing. Top with remaining cakes. Reserve 2 tablespoons frosting for decorating. Spread remaining frosting over top and sides of cake. Top cake with ‘chalk board’.
3.Knead ready-made red and green icings, separately, on a surface dusted with a little sifted icing sugar until icing loses its stickiness. Roll each piece on a surface dusted with a little icing sugar until 2mm thick. Cut red icing into an apple shape; cut green icing into a leaf shape. Secure to ‘chalk board’ with a little water.
4.Secure licorice sticks around the edge of the ‘chalk board’ with a little frosting, trimming to fit. Draw on the chalk board with chalk.

Start this a day ahead so that the black icing can dry out. The chalk is non-toxic, you can wipe the chalk off before serving, if you prefer.
