Ham, pea & parsley fritters

Oh, how I love ham off the bone when the festive season begins... and oh, how I always overindulge and then tire of it! If this happens to you, try this recipe for scrumptious fritters, crammed full of ham and peas, that no one can ever have enough of!

1.In a bowl, combine the ham, peas, spring onions and parsley. Add the beaten eggs and flour seasoned with salt and pepper. Stir to combine.
2.Heat 1cm oil in a frying pan to medium. Drop tablespoonfuls of the fritter batter into the oil and fry until golden brown – don’t be in a hurry to turn them over, cooking well on the first side is a good idea.
3.Gently flip and fry until golden and cooked through.
4.Serve the fritters with wholegrain mustard.

When cooking fritters, you need to have patience and don’t be surprised if you have to adjust the temperature up and down during cooking to make sure they are perfectly cooked through without browning too much. Cooking lots of fritters? Do them on a barbecue grill plate – it’s ideal for a big batch of fritters!
