Ingredients
Ham, lemon and parsley pasta
- 500 gram angelhair pasta (in italian, capellini d'angelo)
- salt
- 2 tablespoon olive oil
- 2 garlic cloves, peeled and diced finely
- 1 red chilli, seeds removed and sliced finely (optional)
- 4 slices of ham off the bone, torn into rough pieces
- zest of 1 lemon
- 1 cup flat-leaf parsley, leaves picked
- freshly ground black pepper
- grated parmesan, to serve
Method
Ham, lemon and parsley pasta
- 1Bring pan of water to boil, add good pinch of salt and cook pasta according to packet instructions - about 3-4 mins. Pasta should al dente.
- 2Meanwhile, heat oil in a second pan over medium heat. Add garlic and chilli to pan and cook about 3 minutes, or until softened. Add torn ham and cook for a further few minutes. Remove from heat.
- 3Add drained pasta, lemon zest and parsley to pan and toss everything well to combine. Season with salt and pepper and serve with a generous topping of grated parmesan.
