Method
1.Preheat oven to 180°C (160°C fan-forced).
2.Combine oil, onion, garlic and ham in a large baking tray or ovenproof dish. Bake, stirring occasionally, 10 minutes, or until onion is soft and golden.
3.Add potatoes, season lightly with sea salt and freshly ground black pepper, stir to combine. Bake further 30 minutes or until potatoes are tender, stirring halfway through cooking.
4.Stir in parsley and season to taste before serving.
