Ingredients
Ham deli sandwich
- 8 slice rye bread, toasted
- 1/4 cup (75g) bought dijonnaise
- 8 gherkins, sliced
- 8 thick slices ham
- 8 slice slices swiss cheese
- 50 gram watercress sprigs
Red cabbage relish
- 1 tablespoon olive oil
- 3 cup shredded red cabbage
- 1 small red onion, finely sliced
- 1/4 cup (60ml) cider vinegar
- 2 tablespoon sugar
Method
Ham deli sandwich with red cabbage relish
- 1To make relish: heat oil in a frying pan on medium. Add cabbage and onion; cook 3-5 minutes, until softened. Stir in vinegar and sugar. Season to taste. Cook further 5-10 minutes, until tender.
- 2Preheat grill on high. Spread toast slices with dijonnaise. Spoon relish on 4 slices. Top with gherkins, ham and cheese. Grill 2-3 minutes. Top with watercress and remaining bread. Secure with cocktail picks and cut into three.
