Method
1.Place sweetcorn, ham, eggs, milk, butter, spring onions, herbs and jalapenos into a medium bowl. Add flour and salt and mix gently to form a batter.
2.Heat a tablespoon of oil on the hot plate of a barbecue or in a non-stick frying pan over medium heat. Drop large tablespoons of batter onto hot oil and cook until golden on both sides and cooked through. Remove to a warm oven while you cook the remaining fritters, adding a little more oil if necessary. Serve with rocket, sour cream and sweet chilli sauce.

- Makes about 24 medium fritters.
