Lemon dressing

Method

1.Cook whole potatoes in a large pan of boiling, salted water for 10 minutes, until tender. Drain, and when cool enough to handle, peel and cut into thick slices. While still warm, add to dressing and toss carefully to coat. Set aside to cool.
2.To make lemon dressing: whisk all ingredients together in a large bowl.
3.To serve, arrange spinach, potato and remaining ingredients on plates and drizzle with any remaining dressing.

It may come as a surprise that trimmed pork tenderloin contains less fat than skinless chicken breast. It is also an important source of zinc and iron, as well as being rich in protein.
