Method
1.Preheat oven to 180°C. Grease a large loaf tin.
2.Butter each piece of bread and arrange in the loaf tin, tucking the ham between slices.
3.In a bowl, whisk the eggs, cream, milk, ½ cup cheese, mustards and rosemary. Add the salt and pepper. Pour the mixture over the bread, then press the bread into the mixture. Top with the remaining cheese, parsley and chilli flakes. Stand for 20 minutes to allow bread to soak up the egg mixture.
4.Bake for 20-30 minutes until top is golden and middle is cooked.
5.Serve hot in spoonfuls or if you’re patient enough, allow to cool and slice.
Note
- Serves 4-6. – This recipe relies on fairly good-quality bread but it can be as stale as you like.
