Quick and tasty ham and courgette slice from New Zealand Woman's Weekly.

Ingredients
Ham and courgette slice
- 6 eggs
- salt and freshly ground black pepper
- 1 1/2 cup milk
- 1 onion, finely diced
- 500 gram grated courgette
- 1 cup grated tasty cheddar cheese
- 2 ham steaks, diced
- 1/4 cup chopped parsley
- 1/4 cup olive oil
- 1 cup flour, sifted
Method
Ham and courgette slice
- 1Heat oven to 190C and line a 17 x 27cm slice tin with non-stick baking paper.
- 2Break eggs into a bowl, season well with salt and pepper and whisk lightly. Whisk in milk then stir in all remaining ingredients.
- 3Pour mixture into prepared tin and bake for 30 to 40 minutes or until golden brown and set. Slice into squares.
