Ham and courgette slice

Quick and tasty ham and courgette slice from New Zealand Woman's Weekly.

Ingredients

Ham and courgette slice
  • 6 eggs
  • salt and freshly ground black pepper
  • 1 1/2 cup milk
  • 1 onion, finely diced
  • 500 gram grated courgette
  • 1 cup grated tasty cheddar cheese
  • 2 ham steaks, diced
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • 1 cup flour, sifted

Method

Ham and courgette slice

    Heat oven to 190C and line a 17 x 27cm slice tin with non-stick baking paper.

    Break eggs into a bowl, season well with salt and pepper and whisk lightly. Whisk in milk then stir in all remaining ingredients.

    Pour mixture into prepared tin and bake for 30 to 40 minutes or until golden brown and set. Slice into squares.
