Ingredients

Ham and chive fritters
  • 350 gram finely chopped ham
  • 1 cup self-raising flour
  • 1 1/2 cup milk
  • 2 beaten eggs
  • 1 tablespoon grain mustard
  • 1/4 cup chives, snipped, plus extra to serve
  • 2 tablespoon olive oil
  • creme fraiche, to serve
  • tomato chutney, to serve

Method

Ham and chive fritters
  • 1
    In a large bowl, combine ham and flour. In a jug, whisk together milk, eggs, mustard and chives. Season to taste and gradually beat into flour mixture.

    Heat oil in a large frying pan on medium. Working in 3 batches, cook heaped tablespoons of mixture 2-3 minutes, until bubbles appear. Turn fritters and cook 1 minute, until golden and cooked through.

    Top with creme fraiche, chutney and extra chives to serve.
