Guinness fruit cake

Create a fruit cake with a richer flavour thanks to this simple recipe. It doesn't matter if you're not usually a fan of Guinness, everyone is bound to enjoy this moist, decadent treat!

Method

1.Preheat oven to 150°C/180°C fan forced. Grease and line base and sides of a deep 24cm (base measurement) round cake pan with 3 layers of baking paper, extending paper 5cm above rim.
2.Combine fruit, butter. sugar and Guinness in a saucepan. Cook and stir for 4-5 minutes or until sugar dissolves. Bring to the boil. Remove from heat. Transfer to a large heatproof bowl; cool for 20 minutes.
3.Stir egg, sifted flours and spices into fruit mixture. Spoon mixture into prepared pan: smooth surface. Bake for 1 1/2 hours or until a skewer inserted at centre comes out clean. Cover pan tightly with foil. Cool overnight.
4.Serve cake topped with extra orange slices. Brush with jam, then dust with icing sugar.

Glacé orange slices are in health food stores; replace with mixed peel.
