Guasacaca (Venezuelan-style avocado and herb guacamole)

  • 1 green capsicum, cored, chopped
  • 1/2 cup chopped flat-leaf parsley or mint leaves
  • 1/2 cup chopped coriander (leaves and stalks)
  • flesh 2 small or 1½ large, firm, ripe avocados
  • 1 clove garlic, chopped
  • 1½-2 tbsp red wine vinegar
  • 4-5 tbsp lime or lemon juice, to taste
  • 2 tablespoon extra virgin olive oil or avocado oil

    Put ingredients, bar oil, in processor and blend until just combined. With motor on, drizzle in oil. Tip into bowl; season to taste. Drizzle with a little oil to serve. This goes with anything. You'll love it!
