Ingredients

1 green capsicum, cored, chopped

1/2 cup chopped flat-leaf parsley or mint leaves

1/2 cup chopped coriander (leaves and stalks)

flesh 2 small or 1½ large, firm, ripe avocados

1 clove garlic, chopped

1½-2 tbsp red wine vinegar

4-5 tbsp lime or lemon juice, to taste

2 tablespoon extra virgin olive oil or avocado oil

Method

1.Put ingredients, bar oil, in processor and blend until just combined. With motor on, drizzle in oil. Tip into bowl; season to taste. Drizzle with a little oil to serve. This goes with anything. You’ll love it!
