Guacamole with vegie sticks
  • 2 avocados, halved, stone removed
  • 125 gram can corn kernels, drained
  • 1 tomato, seeded, finely chopped
  • 2 green onions, thinly sliced
  • 1/2 lemon, juice
  • 1 carrot, peeled, cut into sticks
  • 2 stalks celery, trimmed, cut into sticks
  • 1 red capsicum, seeded, cut into sticks
  • 2 lebanese cucumbers, seeded, cut into sticks
  • 3 roma tomatoes, seeded, cut into sticks


Guacamole with vegie sticks

    Scoop avocado flesh from skin with a spoon. Place in a bowl.

    Mash well using a potato masher or fork.

    Stir corn, tomato, onion and juice through avocado. Season to taste. Serve with vegie sticks.


Add a drizzle of sweet chilli or a dollop of sour cream to the guacamole, if you like.
