Grilled salmon fillets with cheesy creamed corn

  • 60 gram butter
  • 3 cup corn kernels
  • 1 spring onion, sliced
  • 2 teaspoon plain flour
  • 300 millilitre thickened cream
  • 1/4 cup grated cheese
  • 4 salmon fillets
  • 2 tablespoon olive oil
  • lemon wedges, sliced spring onions to serve

    Melt butter in a frying pan over medium heat. Sauté corn and spring onion for 2 minutes. Stir in flour and cook for 1 minute. Stir in cream, then simmer for 2-3 minutes. Stir in cheese. Season to taste.

    Rub salmon fillets with olive oil. Season. Char-grill for 2-3 minutes on each side. Serve on creamed corn with lemon wedges and onions.
