Method

1.Brush char-grill with oil and heat on high. Cook peaches, cut-side down, 1-2 minutes. Set aside. Cook ham in batches 2-3 minutes each side, until charred. Tear into bite-size pieces.
2.Arrange cos, peaches and ham on serving plates. Sprinkle with pistachios. In a jug, combine dressing ingredients. Season to taste. Drizzle over salad.
