Ingredients

Grilled ham and peach salad
  • 1 tablespoon oil
  • 4 small peaches, stoned and halved
  • 200 gram thickly sliced ham
  • 2 baby cos, washed and leaves separated
  • 1/4 cup (35 grams) shelled, toasted pistachios, chopped
Dressing
  • 2 tablespoon olive oil
  • 1 tablespoon white balsamic vinegar
  • 2 teaspoon honey
  • 1 teaspoon wholegrain mustard

Method

Grilled ham and peach salad

    Brush char-grill with oil and heat on high. Cook peaches, cut-side down, 1-2 minutes. Set aside. Cook ham in batches 2-3 minutes each side, until charred. Tear into bite-size pieces.

    Arrange cos, peaches and ham on serving plates. Sprinkle with pistachios. In a jug, combine dressing ingredients. Season to taste. Drizzle over salad.
