Grilled chicken with sesame spinach salad
This quick and easy grilled chicken dish is extremely healthy and great for those watching their weight. Packed full of flavour, it can be on the table in under 30 minutes.

Grilled chicken with sesame spinach salad
- 1 tablespoon ground coriander
- 1/3 cup (80ml) lemon juice
- 2 tablespoon light olive oil
- 700 gram skinless chicken breast fillets
- 1 tablespoon rice or malt vinegar
- 1 teaspoon light soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 200 gram baby spinach leaves, washed
- 1 tablespoon toasted sesame seeds
Method
Grilled chicken with sesame spinach salad
- 1In a large baking dish, combine coriander, lemon juice and half of oil. Season to taste. Add chicken, coating well in marinade. Cover and marinate at room temperature for 2 hours, or refrigerate overnight.
- 2Remove chicken from marinade. Reserve marinade for basting. Heat a chargrill pan on high. Cook chicken in 2 batches for 3-5 minutes each, turning and basting occasionally with marinade, until tender and evenly browned.
- 3Meanwhile, combine vinegar, soy sauce, sesame oil, remaining olive oil and sugar in a bowl. Add spinach and sesame seeds. Arrange on a platter and top with chicken. Serve.
Notes
If baby spinach leaves are unavailable, use a bunch of English spinach, washed thoroughly and shredded finely.
