Ingredients
Green bean, watercress and almond salad
- 600 gram green beans, trimmed
- 1 bunch watercress, leaves picked
- 1/2 cup parsley leaves
- 1/4 cup (60ml) extra virgin olive oil
- 2 tablespoon lemon juice
- 1 teaspoon wholegrain mustard
- 1/2 teaspoon caster sugar
- 100 gram flaked almonds, toasted
Method
Green bean, watercress and almond salad
- 1Cook beans in a large saucepan of boiling, salted water for 5 minutes, until just tender. Drain and plunge into iced water. Drain again.
- 2Combine beans, watercress and parsley in a large serving bowl. Just before serving, pour over combined oil, lemon juice, mustard and sugar and toss to coat. Season to taste and top with almonds to serve.
