Grape, prosciutto and goat’s cheese pizza with rocket

This pizza recipe has it all - sweetness from the grapes, saltiness from the prosciutto, creaminess thanks to the goat's cheese and a peppery touch of rocket. It'll go down a treat at your next wine and cheese night

  • 1 1/2 cup plain flour
  • 1/2 sachet instant yeast
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 1/2 tablespoon oil
  • 3/4 cup warm water
  • 100 gram creamy goat’s feta cheese
  • 3 slice prosciutto
  • thyme sprigs
  • 1 1/2 cup seedless grapes
  • 1 cup rocket leaves

    Combine the flour, yeast, sugar and salt in a bowl. Add ½ tablespoon of the oil then mix in the warm water to form a dough. Knead on a floured board until smooth and elastic.

    Place in a greased bowl, cover with plastic wrap and microwave on LOW for 1 minute. Rest dough for 10 minutes then repeat or leave dough in a warm place until doubled in size – around 40 minutes.

    Preheat oven to 190°C. On a lightly floured bench, roll dough into a long strip around 18cm x 40cm and transfer to a baking tray. Spread with feta cheese.

    Tear the prosciutto into pieces and scatter on the base; add some thyme sprigs then bake for 10 minutes. Add the grapes, drizzle with remaining oil and bake until dough is golden and grapes blistered. Scatter with rocket leaves to serve.
