Method
1.Preheat oven to moderately slow, 160°C. Lightly grease and line 3 oven trays with baking paper.
2.In a large bowl, using an electric mixer, cream butter, sugar and cardamom together until light and fluffy. Add golden syrup and beat until combined.
3.In a small bowl dissolve soda in boiling water. Stir flour through creamed mixture with soda mixture. Fold chocolate and nuts through until combined.
4.Roll tablespoonfuls of mixture into balls. Arrange on prepared trays, 3cm apart. Flatten slightly. Sprinkle with extra macadamias.
5.Bake for 10-15 minutes, until golden and firm. Cool on trays for 5 minutes, before transferring to a wire rack to cool completely.
Don’t worry if biscuits crack slightly during cooking.
