Golden-crumbed mushroom popcorn

This moreish recipe sees button mushrooms baked to perfection then crumbed to create delicious little 'popcorn' snacks. Serve with sweet chilli and honey soy dipping sauce for the ultimate party bite

  • 300 gram small button mushrooms
  • 2 tablespoon soy sauce
  • 2 tablespoon honey
  • splash of olive oil
  • sweet chilli sauce, sauce of equal parts soy and honey to serve
Panko crumb mix
  • 1 cup panko breadcrumbs
  • 1 cup plain popcorn crumbs (blitzed in the food processor)
  • 1 tablespoon sesame seeds
  • 1 teaspoon dry oregano
  • zest of ½ lemon

    Preheat oven to moderate, 180°C. Line an oven tray with baking paper.

    For the panko crumb mix: In a large bowl, mix panko, popcorn, sesame seeds, oregano and lemon zest.

    Arrange mushrooms on tray. Drizzle with combined soy, honey and olive oil. Roast for 10-12 minutes until tender. Remove from oven.

    Coat mushrooms in panko mix, one at a time, making sure they’re coated evenly and covered entirely.

    Serve in a popcorn box with sweet chilli and honey-soy dipping sauces.
