Gluten-free marmalade pudding
- 2/3 cup orange marmalade
- 1 orange, quartered, sliced (leave skin on)
- 125 gram softened butter
- 1/2 cup caster sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup rice flour
- 1/2 cup almond meal
- 1/4 cup desiccated coconut
- cream or pouring custard, to serve
Method
Gluten-free marmalade pudding
- 1Preheat oven to moderate, 180°C. Lightly grease four 1 1/2-cup pudding moulds and line bases with baking paper. Place in a large baking dish. Spoon 2 tablespoons marmalade into each mould. Set aside.
- 2Place orange in a food processor. Process until pureed. Add butter, sugar, eggs and vanilla. Pulse until well combined. Add flour, almond meal and coconut, pulsing until combined.
- 3Spoon mixture evenly into moulds. Fill pan with enough hot water to come halfway up sides of moulds. Cover the pan with baking paper and a tight-fitting foil lid.
- 4Bake for 45-50 minutes until cooked when tested. Remove from dish. Cool slightly before unmoulding. Serve warm with cream or pouring custard.
