2 ingredient banana pancakes (gluten-free and dairy-free)
It doesn't get much simpler than this pancake recipe! You just need two staple household ingredients, a fry-pan and you're good to go! This breakfast also happens to be gluten-free and dairy-free

Ingredients
- 1 banana
- 1 egg
Optional extras
- 1 pinch cinnamon
- 1/2 teaspoon vanilla essence
- an extra egg if you want to boost protein intake or make it a bigger meal
Method
- 1Heat a large fry pan with 1 tsp coconut oil. Mash banana in a bowl with a fork until it forms a paste. Crack egg into mashed banana and mix together until well combined. Add any optional extras such as a pinch of cinnamon or vanilla essence and stir to combine.
- 2Add 2 tbsp of batter at a time to the fry-pan. Cook for 1-2 minutes until golden brown and flip, then cook for another minute.
- 3Top with desired toppings such as additional banana, Greek or coconut yoghurt, pinch of cinnamon, pure maple syrup.
