Gluten-free coconut banana bread

  • 3 ripe bananas, mashed
  • 2 cup coconut thread or desiccated coconut
  • 1 cup brown rice flour
  • 1 teaspoon baking powder
  • 4 eggs
  • pinch of salt
  • 1/2 cup coconut oil (Natalie used Chantal Organics)
  • 1/3 cup rice syrup (Natalie used Chantal Organics)

    Heat oven to 180°C. Line a loaf tin with baking paper.

    Add mashed banana, coconut, flour, baking powder, eggs and salt to a large bowl and mix together.

    Heat coconut oil and syrup in a saucepan over a low heat until coconut oil is melted. Pour into the banana mixture and stir together until well combined.

    Pour into loaf tin and bake for 50-55 minutes, until a skewer comes out clean. Wait for it to cool down slightly (20-ish minutes), slice and enjoy while still warm!
