Glaze strawberry trifles
  • 1/4 cup brandy plus 1/3 cup extra
  • 2 tablespoon brown sugar
  • 2 tablespoon strawberry jam
  • 2 250 g punnets, washed hulled, quartered strawberries
  • 300 millilitre thickened cream
  • 1 tablespoon icing sugar
  • 1/2 teaspoon vanilla bean paste
  • 250 gram mascarpone
  • 500 gram sponge fingers
  • 50 gram grated milk chocolate
  • 1/2 cup toasted flaked almonds

Method

    In a small saucepan, combine brandy, sugar and jam. Stir over low heat until sugar dissolves
  • 2
    In a medium bowl, toss berries with brandy mixture. Chill until required.

    In a large bowl, using an electric mixer, beat cream, icing sugar and vanilla together until soft peaks form. Place mascarpone in a separate bowl and fold cream mixture through.

    Dip sponge fingers into extra brandy and break up into pieces.

    Divide half sponge fingers between eight serving glasses.Top with half berries and cream. Repeat layers. Finish with chocolate and almonds. Chill before serving.
