Method

1.In a small saucepan, combine brandy, sugar and jam. Stir over low heat until sugar dissolves
2.In a medium bowl, toss berries with brandy mixture. Chill until required.
3.In a large bowl, using an electric mixer, beat cream, icing sugar and vanilla together until soft peaks form. Place mascarpone in a separate bowl and fold cream mixture through.
4.Dip sponge fingers into extra brandy and break up into pieces.
5.Divide half sponge fingers between eight serving glasses.Top with half berries and cream. Repeat layers. Finish with chocolate and almonds. Chill before serving.
