Ginger cream biscuits

Ingredients

Ginger cream biscuits
  • 125 gram butter
  • 1/2 cup sugar
  • 2 tablespoon golden syrup
  • 1 teaspoon vanilla essence
  • 1 egg
  • 1 1/2 cup flour
  • 2 teaspoon baking powder
  • 2 teaspoon ground ginger
  • 2 tablespoon milk
Ginger icing
  • 1 1/2 cup icing sugar
  • 1 teaspoon ground ginger
  • 1/4 cup finely chopped crystallised ginger
  • hot water

Method

    Soften butter and beat in sugar until combined. Add golden syrup, vanilla and egg. Beat again. Sift flour, baking powder and ginger over butter mixture and combine with milk.

    Line a baking tray with baking paper. Place teaspoonfuls of mixture on tray. Bake at 200°C for 10 minutes or until cooked. Cool. Join biscuits together with ginger icing.

    To make ginger icing, mix icing sugar, ground ginger, crystallised ginger and enough hot water to make a firm icing.
