Method

1.Preheat oven to moderate, 180°C. Place a wire rack in a roasting dish big enough to fit ham.
2.For the glaze: In a small saucepan, stir all ingredients on medium heat until sugar dissolves. Reduce heat to low. Simmer for 10 minutes, then remove from heat and cool.
3.Score a diamond pattern about 5mm deep all over ham fat.
4.Place ham on rack (if shank overhangs, wrap in foil) and pour 1 cup water into base of dish.
5.Brush one-third glaze over ham. Bake for 45 minutes, brushing and basting with glaze and pan juices.
6.Remove ham from oven and rest for 15 minutes. Garnish with watercress and carve into slices to serve.
  • If desired, spice the ham in random places with some whole cloves. Remove before serving.
