Garlic prawn pots

Ingredients

Method

1.Preheat oven to 220°C.
2.Peel prawns, leaving tails intact. Make a cut down the back of each prawn to de-vein them.
3.Divide oil and butter between 4 small ovenproof pots or ramekins, then divide garlic and chilli between them.
4.Transfer to oven to cook for 10 minutes then remove and place 6 prawns into each pot.
5.Return to oven and cook for a further 6-8 minutes or until prawns are just cooked through.
6.To serve, sprinkle each pot with the parsley, salt and pepper and serve with lemon wedges and fresh baguette.
