Garden salad with walnuts
  • 2 tablespoon white wine vinegar
  • 2 teaspoon dijon mustard
  • 1/2 teaspoon sugar
  • 1 clove garlic, crushed
  • 1/3 cup (80ml) extra virgin olive oil
  • 250 gram baby cos leaves
  • 100 gram wild rocket
  • 1/2 cup (35g) coarsely chopped walnuts

Method

    Place vinegar, mustard, sugar and garlic in a small bowl. Season to taste and whisk until combined. Gradually add oil, whisking, until dressing thickens slightly; set aside.

    Wash salad leaves; drain and dry. Arrange in a salad bowl. Sprinkle with walnuts and drizzle with dressing. Toss lightly to combine and serve.
