Fusilli with radicchio and pancetta
This delicious spiral pasta is wonderful tossed with crispy pancetta and sauteed radicchio pieces to create this quick and tasty dish.

Ingredients
Fusilli with radicchio and pancetta
- 500 gram fusilli (spiral pasta)
- 2 tablespoon extra virgin olive oil
- 200 gram pancetta, thinly sliced
- 1 red onion, halved, thinly sliced lengthways
- 1 clove garlic, finely chopped
- 2 heads radicchio
- 1/2 cup water
- 2 tablespoon balsamic vinegar, to serve
- cracked black pepper, to serve
Method
Fusilli with radicchio and pancetta
- 1Bring a large saucepan of salted water to the boil. Add fusilli. Cook according to packet directions. Drain and return to pan, covering with a lid.
- 2Meanwhile, heat oil in a small frying pan and saute pancetta 4 minutes, until golden. Set pancetta aside until cool enough to handle, then tear into large pieces.
- 3Meanwhile, add onion to pan. Cook 5 minutes, stirring. Add garlic. Cook 1 minute. Increase heat to high, add radicchio and water. Cook 4 minutes, until wilted. Add vinegar. Season to taste. Set aside.
- 4Add onion mixture to pasta. Toss on high heat 1 minute. Sprinkle with cracked black pepper, to serve.
