Method

1.Preheat oven to moderate, 180°C. Lightly grease 6 x 1-cup ramekins (or a large casserole dish).
2.Combine pears and water in a medium saucepan. Bring to a boil on high. Reduce heat to low and simmer, covered, for 4-5 minutes until just tender.
3.Add rhubarb and sugar. Simmer, covered, for 2-3 minutes, until rhubarb is tender. Stir in grapefruit. Cook for 1-2 minutes until warmed through. Spoon mixture into ramekins.
4.CRUMBLE: In a small bowl, using an electric mixture, cream butter and sugar together until pale. Fold remaining ingredients through. Sprinkle over fruit.
5.Bake for 15-20 minutes until golden. Serve warm with custard and ice-cream.

You may need more sugar, depending on the tartness of the rhubarb. Use another mix of fruits such as apples, rhubarb and frozen berries.
