Ingredients

Method

1.Preheat oven to 180°C. Using an electric mixer, beat eggs until frothy. Gradually add sugar and beat until thick and pale and mixture holds its shape (this can take up to 5 minutes).
2.Sift together flours. Combine water and butter in a jug. Fold flour lightly into egg mixture, a little at a time, followed by water mixture.
3.Place peaches in a 4-cup casserole dish. Pour over sponge mixture. Bake for 25-30 minutes, until sponge springs back when touched lightly. Serve with cream.

Other canned or fresh fruit of choice may be used in place of peaches.
