Ingredients
Fruit muesli slice
- 2 tablespoon honey
- 100 gram butter, softened
- 1/3 cup (50g) raisins (or sultanas)
- 1/4 cup (60g) pepitas
- 1 cup (75g) rolled oats
- 1/3 cup (25g) shredded coconut
- 2/3 cup (100g) finely chopped dried apricots
- 1/2 cup (110g) caster sugar
- 1 egg yolk
- 2/3 cup (100g) self-raising flour
- 1 tablespoon custard powder
Method
Fruit muesli slice
- 1Preheat oven to moderate, 180°C (160°C fan-forced). Grease a 20 x 30cm lamington pan and line with baking paper.
- 2Heat honey and one-quarter of butter in a small saucepan, stirring until smooth. Transfer to a medium bowl; stir in raisins, pepitas, oats, coconut and apricots.
- 3Beat sugar, egg yolk and remaining butter in a small bowl with an electric mixer until light and fluffy.
- 4Mix in sifted flour and custard powder. Press mixture over base of pan; sprinkle with muesli. Bake about 25 minutes.
