Fruit and nut clusters
  • 1 1/2 cup (225g) milk chocolate melts
  • 1/3 cup chopped pistachio kernels, toasted
  • 1/3 cup chopped walnuts, toasted
  • 1/3 cup finely chopped dried apricots
  • 1/3 cup sultanas, chopped

    in a medium heatproof bowl, place chocolate over a saucepan of simmering water (don't let base of bowl touch the water). Stir for 5 minutes or until smooth. Stir in nuts and fruit until combined.

    Line a baking tray with baking paper. Drop level tablespoons of chocolate mixture, about 3cm apart, into mounds on prepared tray. Chill for 1 hour or until set.
