Frozen mocha mousse (blender version)

1.In a blender, combine chocolate and coffee. Add boiling water and blend for 1 minute until smooth.
2.With motor running on low, add egg yolks, one at a time. Add sugar and vanilla, blending to combine.
3.Using a whisk, beat egg whites until frothy. Increase blender speed to medium. Gradually add egg whites, then cream. Continue to blend for 1-2 minutes.
4.Pour mousse into a 4-cup freezer container. Cover with plastic wrap and freeze for 3-4 hours until firm. Serve in scoops with figs and sprinkled with biscuit crumbs.

Frozen mocha mousse (by hand version)

5.In a large bowl, using an electric mixer, beat eggs, sugar and vanilla together until pale, thick and doubled in volume.
6.Melt chocolate with coffee and cool slightly. Fold into egg mixture.
7.Using a large metal spoon, fold in whipped cream. Freeze.
