Fresh fruit semifreddo

Quick, fresh and delicious - this fresh fruit semifreddo is the perfect cool-down treat for summer!

Method

1.Line an 8x32cm loaf pan (8 cup) plastic wrap, allowing it to overhang.
2.In a food processor, combine banana, condensed milk, thickened cream and yoghurt. Pulse until smooth.
3.Divide mixture into two bowls. Chill one half mixture. Fold passionfruit pulp through remaining mixture and pour into pan. Freeze 3 hours until firm. Stir dark chocolate through remaining mixture. Pour over frozen passionfruit mixture. Freeze 3 hours until firm.
4.Remove semifreddo from pan. Drizzled with extra passionfruit pulp and coconut flakes. Serve sliced.

Remove semifreddo from freezer 5 minutes before ready to serve to allow it to soften slightly, making it easier to slice.
