Ingredients

Method

1.Preheat oven to moderate, 180°C. Line 2 oven trays with baking paper.
2.In a medium bowl, combine egg white and sugar. Whisk for 1 minute until frothy.
3.Add butter, flour and cinnamon, whisking until smooth. Set aside for 5 minutes.
4.Drop 1 teaspoon egg white mixture onto tray. Spread very thinly with back of spoon to form an 8cm round. Repeat to form 1 more round, 2cm apart. Spread 2 more rounds on second tray. Bake for 5-6 minutes, or until edges are just golden.
5.Working quickly with a spatula, lift rounds from tray and place upside-down. Arrange message along the centre of each cookie. Fold in half to enclose message and bend to form a horseshoe shape.
6.Place cookies, edges pointed down, into mini-muffin pan holes or egg carton. Repeat with remaining mixture, cooking in batches of 2. Allow to cool completely. Serve cookies with sliced melon, if liked.
